But WTF do you eat???????? The breakfast edition.

I LOVE food, freaking love it. I always buy the higher quality items and spend a little more for better groceries. It makes a difference and if its going in my body, I want it to be the very best (insert penis joke of choice here...). I eat a lot and I eat often. Brad will tell you that I eat as much as he does sometimes, and sometimes he is right!

I don't know if breakfast truly is the most important meal of the day because I've never had nachos with margaritas for breakfast and that is MY most important meal.  But I do eat breakfast every day, without fail. My standards are PB & J or PB & banana on Dave's Killer Bread, a protein shake (insert second penis joke of choice), or fruit.  These things are eaten in the car on the way to work and usually end up smeared on my steering wheel. When I have a little more time to play in the kitchen, I like to make tofu scramble, potatoes, crepes, muffins, French toast (or freedom toast if  you're an asshole) and Spanish coffee!  I'm going to start you off easy here with my banana muffin recipe. They are delicious and easy and it makes a whole dozen, so if you really brain cramp about what else to eat during your meatless day, you can just fill your sweet face with muffins ALL day long! 

(Note:  The recipe is pretty high in sugar but I said I was vegan, not a fucking hippie. I do purchase the non-bone char sugar, because one of the things I found out when I gave up dairy and eggs is that they use charred animals bones to bleach sugar!!  WTF?  I don't know how that works or who came up with it, but yuck.)

Banana Muffins
3 ripe bananas
1/4 cup oil or melted margarine
1 cup sugar
2 cups flour
1 tsp. salt
1 tsp. baking soda
1 cup nuts or chocolate chips

• Mash bananas (preferably they are overripe). Add oil and sugar and mix well.  (I actually use coconut oil for baking and I highly recommend investing in some. Its solid at room temperature, so just microwave it a bit.  It gives baked goods an incredible texture!  I also use it to roast brussel sprouts, but I digress...)
• Combine the flour , salt, and baking soda and add to the banana mixture. Mix just until the flour is blended. No need to mix it too much.  (I have tried subbing whole wheat pastry flour for white flour and it was perfect). Add the nuts, chocolate or any optional items.
• Pour into muffin pans or a bread pan and bake at 360°F until a toothpick comes out clean.

Makes 1 Dozen

So, you want to go veg like me...

...or maybe you don't.  But you DID tell me you'd go meat free one day per week for 2011 and I love you like crazy for that!!!  Seriously, I do. And if you know me well, you know its not easy to make this girl giddy.  And BONUS, you will be saving a bunch of animals, you'll be improving your health, you'll be easing your burden on the planet and you'll probably expand your diet and your taste buds in fabulous ways you couldn't have previously imagined.

I'm going to post info each week to help you along in your veggie journey. I'm only going to post vegan recipes because that's the way I cook and I'm bossy.  I have yet to try a recipe that I thought would be better with dairy, however do feel free to sub butter for Earthbalance (the vegan buttery spread that will end your love affair with cows), milk for the milk alternatives, cheese for whatever. Use what you have on hand and take it nice and slow. I'll be here to help you along the way.  Baby steps!  I don't want you to freak out and give up halfway through the year.
